here's Mrs Amberjack recipe for Assam Pedas to share.....

For 4 - 5 pax serving ---

Ingredients are:
30 - 40 strands dried chillies ( slit thru and remove seeds...else too hot...then soak with hot water for a few mins )

100gm onions ( ard 2 medium size )
25gm garlic ( ard 5 cloves )
1/2 tea spoon turmeric powder
15gm prawn paste (belacan)

all these ingredients to be blended into a smooth paste

30 cents of laksa leaves (daun kesom) remove from the stems and rinse in water
3 table spoon tamarind juice ( 10gm tamarind paste )
4 table spoon sunflower oil for frying the blended ingredients

procedure:
1. heat oil - add in all the blended ingredients...saute till slightly dry & till the aroma smell gets into your nose.

2. add laksa leaves, tamarind juice and 1 litre of water

3. when it reaches boiling state, put in the fishes (sliced to your preferred size)
4. leave it to cook for abt 20 mins till the gravy boils nicely..

5. add salt to you preference if necessary.......

you may add in pieces of ladys fingers and some slices of tomatoes into the gravy for better presentation.....
